Day 39


Thoughts: So check it out, the largest Teflon company in the world commented on my blog today!! I wrote a blog about the effects of Teflon in my blog 'Day 30'.

I was surprised when I received a comment from a representative of DuPont and wondered how they came across my blog! Here's what he wrote:

Hi Liana -- Because there's so much misinformation out there about Teflon, I'm not surprised that you are concerned. I'm a representative of DuPont though, and hope you'll let me share some information with you and your readers, so that everyone can make truly informed decisions. Regulatory agencies, consumer groups and health associations all have taken a close look at Teflon. This article highlights what they found -- the bottom line is that you can use Teflon without worry.

Obviously you will create your own conclusions about Teflon. I am sceptical of Teflon as it is a high molecular weight compound consisting wholly of carbon and fluorine product that is man made and used on cars, and that is also used in our pots and pans to cook. I get that DuPont are a massive company and worldwide distributer of Teflon and they make a lot of money, and part of this business is to protect any "negativity" towards Teflon in reducing the business. The thing is Ross, if you weren't working for Teflon and getting paid from DuPont, would you still tell people that it is safe to use?

I choose to keep it simple, which means no added anythings, no chemicals, no preservatives, no additives, so I am using cookware without Teflon (stainless steel). Keepin it simple has got to be healthier than taking that risk.

Challenges: I have been working 18 full on hour days and sleeping 4-5 hours. Today tiredness got me! I was challenged with energy. I wanted to sleep and put off all the things I had said I would do. Instead i got present and connected with my body and the tiredness dissolved! I also had a beautiful salad and some chocolate balls for some natural life energy :))) I used to think If i was tired and lacked energy I needed to eat more for more energy, when in fact now I get I need to consume less so my body isn't working as hard to digest it! Keepin it simple :)))) And I love that I get to eat chocolate everyday!!!

Triumphs: Today when I was in the fruit and veg shop I picked up a bag of lollies that were on the counter. Usually I would look at them and wish I could eat them but think oh no I shouldn't eat them. But oh no...not now! Wooo! Today I looked at the lollies like I have never looked at lollies before...they looked dead. The frequency looked and felt dead and plastic. I had no desire at all to eat the lollies. My body did not resonate with them at all! And was happy with my purchase of kaffir lime leaves, lettuce and spinach!!!

What I Ate Today:

Breakfast: a salad! yes I had salad for breakfast! wooo wooo! It was a nice light fresh start to the day :) Green lettuce, alfalfa and advocado.

Lunch: a necatrine and a green salad with alfalfa, lettuce and advocado

Dinner: homemade green thai curry made from scratch! Steph made it, I showed her how :))) Now she can show others!!!!

Dessert: 4 chocolate balls

Snacks: goji berries

Cost: I bought 3 advocados from the organic supermarket today for $3.39, which is cheaper than the supermarket!

Recipe: I posted my recipe for the curry again...did i say curry? I meant BEST EVER curry!

Recipe: Chicken Thai Green Curry
Ingredients for the curry paste:
10 fresh green chilis, finely chopped (keep seeds for extra heat, if desired)
2 tbsp. finely chopped lemongrass
1 tsp. ground coriander
1 small shallot, finely chopped
3 garlic cloves, finely chopped
1 tsp. galangal root (or ginger)
1 tsp. of freshly ground coriander seeds
1 tsp. of freshly ground caraway seeds
A few ground peppercorns to taste
1 tsp. himalayan salt
1 teaspoon kaffir lime leaves
Mortar and pestle (for grinding and later, pounding)
Blender if mortar and pestle are not available

My own curry paste! wooo from the heart, from scratch and from the earth!

Directions:
1. Organize all of your ingredients.
2. Gently heat a medium saucepan until surface is hot.
3. Add all ingredients paste to saucepan.
4. Stir fry for a few minutes.
5. Place contents of saucepan into mortar or blender. Pound or puree until smooth, adding tiny amounts of water if needed.
7. Store green curry paste in a plastic container with a tight-fitting lid to use for later on in the week! and use save two-three tablespoons now for cooking.

Ingredients for chicken thai curry.
Chopped organic free range chicken
green beans
chopped brocoli
one coconut
lime
kaffir lime leaves
agave syrup

Directions to make the chicken thai green curry (You can make this vegetarian without chicken!)
1. Heat olive oil or virgin coconut oil in a wok or saucepan. Add 2-3 tablespoons of your amazing curry paste!
2. Add chicken and fry until golden.
3. Open the coconut (there are 3 holes at the top, one of them is soft, poke it with a knife and get the juice/milk out of it) and pour it on the chicken.
4. Allow to simmer, add brocoli and beans.
5. Add kaffir lime leaves and then the agave syrup to make it sweet!
6. Simmer until the vegetables are done for you, I like them when they are firm and crunchy!
7. Squeeze lime over the curry.
8. Serve with brown rice! This is the most divine curry I have ever had!
