January in New York...

After the adventures in Costa Rica,
I am back in New York! 

I am fortunate enough to be looking outside the window right now and seeing beautiful snow covering the trees, and streets and cars! White and fresh :) It snowed last night and has settled well!



I am drinking hot herbal tea right now
 and have at least 2 of them a day
to keep warm from INSIDE out! :)
Here is one the recipes I am using... ENJOY!



Makes: tea for 2


Total making time: 15 minutes

Ingredients: 
1 tablespoon of........... lavender
1 tablespoon of..... lemon myrtle
1 tablespoon of................ sage
1 tablespoon of green tea leaves

Action:
1. Boil 4 cups of water in a pot along with all the herbs. Drain at the end for a clear tea.
(Feel free to chew on the herbs after they are boiled for extra nutrients)
2. OR boil the water, pour it into the cups AND THEN dip in the tea strainer and steep for 10 minutes.

SUGGESTIONS:
+ ADD 1 tablespoon of honey if you like it sweet

The herb leaves can be dried or fresh! Both will work!

Relaxes the body
Balances mood
Soothes muscles
Relaxes mind
Aids weight loss
Promotes good sleeping
Relieves cramps 
Clears the skin


I have many dreams and one of them was fulfilled this week!
To ICE SKATE in CENTRAL PARK in NYC!

As I was skating around I really got how grateful I am to be alive, and have arms and legs,
and a healthy functioning body to be able fulfill this!

I am learning that
the more I
APPRECIATE,
the more I enjoy life.


I was born and raised in Australia, in places like Northern Territory and Queensland where it is MOSTLY HOT weather so living in the winter is a challenge for me! I have been building my immunity to it ;) I have been mixing warming foods that are cooked and heated, with raw foods, juices and smoothies. It seems to be keeping my body warm and at ease! It has been my tastiest and most enjoyable winter yet!

Here is what I have mostly been EATING the past 2 weeks...

By accident I made MAC N CHEESE!

And WOW! 

I was so happy (and so were my friends!) to create a healthy alternative to one of the tastes I crave!
If you are skeptical try it for yourself! DELICIOUS natural MAC N CHEESE!


Makes plenty for 4 people!

Ingredients: 
1 cup extra virgin coconut oil plus extra for cooking
1 cup of coconut milk 
one brown onion diced
1/4 cup nutritional yeast
3 cloves of garlic diced
1 tablespoon himalayan salt
1/2 cup fresh thyme 
1 tablespoon of sesame oil
1 cup of chopped cauliflower
1 packet of brown rice pasta - macaroni! 
5 cups of vegetable stock 
(or make your own vegetable stock: boil for 1.5-2 hours in a large pot... 5 cups of water with 2 carrots diced, 2 tomatoes chopped, 3 celery stalks chopped, 1 small onion diced, 2 cloves of garlic diced, one leek chopped, 3 tablespoons of himalayan salt, a handful of bay leaves, 2 tablespoons of thyme and 2 tablespoons of parsley... After boiling drain so you are left with the liquid. Use this as vegetable stock and you can store in glass jar in fridge for one week. Discard the fiber of the vegetables, use it for compost or eat it, do what you like to be resourceful.)

Action:
1. In a large pot add the vegetable stock and coconut oil and bring to the boil.
Stir and then add the pasta.

2. While the pasta is boiling, in a fry pan heat extra virgin coconut oil. Add the onion and garlic and fry until golden. Then Add the salt and thyme and fry together for a couple minutes and then add all of this fry into the pasta pot.
3. Next add the chopped cauliflower, coconut milk and thyme and
let simmer on medium heat for 4 minutes.

4. Add the nutritional yeast and stir. 
5. Add the sesame oil as the sauce starts to thicken.
6. It is ready when the pasta is cooked and the sauce is thicker. 

TIP:
+ To make the sauce thicker add more nutritional yeast, cauliflower and/or pasta. 
Try adding one chopped zucchini! 
+ If it becomes too dry add more sesame or coconut oil. 
+ If you want it cheesier add more nutritional yeast!
+ Add more salt if you like it saltier! 
+ Add peas for some color.
+ Add turmeric to make it more yellow!
+ Add curry powder for MAC N CHEESE CURRY STYLE ;) 

This recipe is DAIRY FREE, SOY FREE and GLUTEN FREE. It is a great alternative to 'cheese'!

Talking to all chocolate lovers here...
OR people who have been turned off chocolate because of tasting the processed version... trust me that is a completely different species of CHOCOLATE! Now its PROCESSED store bought CHOCOLATE vs RAW CHOCOLATE. Store bought chocolate (store bought chocolate is decreasing and other options like Rock N Raw Chocolates are being offered as a tastier and healthier option. Why.... because it makes sense. so many people are feeling better eating better foods and it just so happens to be that majority of human beings on earth eat chocolate on a very regular basis. My new winter favorite :)

Makes one large batch of fries!

Total making time average: 30 minutes

Ingredients:
2 large sweet potatoes cut into fries
coconut oil for cooking
one bunch of fresh basil
one cup of dried shredded coconut 
OR shred your own coconut from a fresh one!

SUGGESTIONS:
+ ADD 1 tablespoon of himalayan salt at 
the end for sweet and salty!
+ ADD 2 tablespoons of curry powder at the end for curried fries!

Action: 
1. Heat 1/4 cup coconut oil in a fry pan. 
2. Add fries, each one should be covered well in oil
3. Let the fries cook and when they are golden brown gradually add coconut and basil !

Last night I watched this documentary with friends. Was absolutely MIND BLOWING. I recommend checking it out if you want to see some of the beauty and majestic landmarks of the world, along with the grueling jobs that some people do day to day. I say grueling, and check it out for yourself... did you ever think about the factory workers? and what they look like and what they do? 

I am leaving the state to travel a bit and meet people and will be back in New York soon! 

Oh and there is word on the street that I will be giving a RAW CHOCOLATE DEMONSTRATION at Organic Avenue in Manhattan in June so stay tuned for that!

DAY 37, 38 & 39 FOOD JOURNAL

Food Journal...

In Costa Rica...



The past 3 days was traveling from beach front Dominical, 
to the Volcano at La Fortuna!



This is the view from my room.

In Dominical I got to use aloe vera daily !
So NOURISHING for my skin! :)

Here I have been drinking fresh fruit smoothies
freshly squeezed orange juice
green tea and chamomile tea

And I have been drinking my PHRESH GREENS daily ! 
To get my daily dose of wheatgrass, spinach and kale!


I have been eating sushi, beans & rice, eggs and fresh fruit. 


THE SPRINGS has NATURAL HOT SPRINGS.
 I have been soaking in them daily! 


They will look after you in terms of FOOD and 
keeping it as NATURAL AS POSSIBLE while there :)

Skin colour thanks to sun AND an olive oil, chamomile, honey skin moisturizer :)

I have been absorbing the minerals from the hot springs. 
Today I also covered myself in bentonite clay for a body wrap! 
and I spent a lot of time in the sauna and steam room :)

And with doing all of this, The Earth Diet team and I are designing
NEW RECIPES EVERY DAY for the month of January!
Some of my favorites so far are:

OAT CREPES on DAY 8 


Makes pancakes for one person! Double the recipe if you want to share it ;)

Ingredients:
1 cup of gluten free oats blended into a fine flour meal 
1 cup almond milk 
1 egg
1 tablespoon of maple syrup or honey
AND... 
Extra Virgin Coconut Oil for cooking
Maple Syrup for serving

Action: 
1. Mix all ingredients either in a BOWL or high speed blender like the Vitamix. The batter should be a smooth consistency. Add more oats if you want thick pancakes.
2. Heat oil in a pan and when it is hot pour the batter. Turn over once you see bubbles appear on one side. 
3. Serve with fresh fruit, CHOCOLATE DIPPING SAUCE, cacao powder, maple syrup, crushed nuts, finely grounded coconut! Get creative!

This recipe was designed by Liana Werner-Gray.

CHOCOLATE DIPPING SAUCE on day 5.


Makes 2 cups of chocolate sauce. A large serving for one or share with friends!

Ingredients:
1 cup Raw Cacao Powder
1 cup Extra virgin coconut oil
1 cup Maple Syrup or Raw Honey

Action:
In a Vitamix or high speed blender mix all ingredients until smooth! 

Always add more cacao if you like dark chocolate, and add more maple syrup if you like it sweet! 

SUGGESTION: 
Dip with strawberries or other fruits! Also makes a great RAW ICE CREAM TOPPING, or cake/pancake topping! OR pour it into ice cube holders and make mini chocolate blocks! 

BENEFITS:
High in magnesium, relaxes the muscles, aids weight loss, aphrodisiac  increases energy, replaces processed chocolate, stress relief.


CHOCOLATE WALNUT ICE CREAM on day 1


RAW CHOCOLATE WALNUT ICE CREAM
Makes one large tub for yourself or for sharing ;)

INGREDIENTS:
2 cup of walnuts
2 cup of water
1 cup of maple syrup or honey
2 tablespoons of cacao powder
1 tablespoon of vanilla extract (optional)
1/2 teaspoon of himalayan or celtic sea salt (optional)

ACTION: Either use an ice cream maker, Vitamix or High Speed Blender. 
1. On high speed mix all ingredients until smooth fluffy ice cream like consistency. 
2. Place in the freezer overnight! 
TIP: Freeze for a few hours and then process again in the blender to make it even creamier! 

+ ADD EXTRA cacao if you like super CHOCOLATE, add extra maple syrup if you like SUPER SWEET! 
+ To replace the nuts (for nut allergies) use hemp seeds or sunflower seeds.
